Misty Knoll Farm 100% Grass-fed Lamb
Our sheep freely range on pastures from the time they're born. The ewes eat locally-milled grain only during lactation to ensure adequate milk production. All the lambs are milk-fed naturally from their mothers for three months and then graze on grass until they are finished.
We manage our sheep this way because grass is the natural diet for sheep and other ruminants, and it results in more healthful meat. Meat from grass-fed animals has more Omega-3 type fats and more CLA (conjugated linoleic acid), an anti-fat, cancer-fighting fatty acid, and it is higher in protein, vitamin E, and beta carotene than grain-fed meat.
The average lamb that is slaughtered for meat weighs 135 pounds at six months of age, much larger than our grass-fed lamb. This results in bigger chops and roasts, but is only accomplished by finishing (fattening) on grain. While grain-fed lamb may have a milder flavor and be slilghtly more tender, this comes at a cost to the health of the animal and, ultimately, the people who eat the meat. A majority of lambs raised for meat, even those labeled "grass-fed," receive grain while they are grazing, but our lambs are 100% grass-fed.

More About Our Lamb and Pricing
FALL LAMB is from lambs that are seven to nine months of age, so the meat has a more mild flavor than older lamb. We're taking orders now, and it will be available beginning late October through December. The price for fall lamb is $5.75 per pound based on hanging weight—the step just before the meat is divided into the familiar retail cuts you cook with. Our grass-fed lambs average 40-50 pounds hanging weight, bringing the total to $230-$287 for a whole lamb or $115- $143 for a half.
YEARLING LAMB is meat which has attained its peak flavor development, and yields the larger chops and roasts some of our customers prefer. The larger size is a result of age, not from finishing on grain The price is $5.75 per pound based on hanging weight, which ranges from 45-90 pounds. Available in wholes or halves.
MUTTON is meat from an older sheep. These aren’t sick sheep like you might find at the livestock auction--these are healthy grass-fed sheep from our own flock who either can’t or won’t raise lambs. Mutton is nearly impossible to source in the store or at your local butcher shop, but in response to customer demand, we at Misty Knoll Farm offer mutton. As with our lamb, we arrange the butchering so you just pick up your cut, wrapped and frozen mutton. The price is $4.00 per pound of hanging weight, which varies according to the size of the mature animal but can range anywhere from 60 to 125 pounds.
